Mix the yeast with the sugar, 3-4 tablespoons of warm water and 3 tablespoons of flour, form a mayonnaise and let it rise for 10 minutes in the heat.
After the 10 minutes in which the mayonnaise grows, take a bowl with 250 g of flour, and in the middle of it a small depression is formed in which the melted and slightly cooled butter, oil, salt, mayonnaise and warm water are added. Mix well and knead until you get an elastic crust (if it is too hard add more water, respectively if it is too soft add a little flour). After kneading for 5 minutes, leave it to rise for 20 minutes in a warm place until it doubles in volume.
After the dough has risen, it is placed in the tray covered with baking paper and spreads with your fingers towards the edges of the tray until it evenly covers the entire surface of it. Grease with tomato or pepper juice and sprinkle on top of mushrooms, sliced peppers and olives, lightly tempered cabanos and diced tomatoes.
Place in the preheated oven for 10 minutes. After 10 minutes in which it is cooked over low heat, add the mozzarella and cheese and leave it in the oven for another 10 minutes on medium heat.
After removing from the oven, you can add a little tomato juice or ketchup in graphic forms and cover the tray with a towel.
